Morning Glory Overnight Oats

A muffin and some oatmeal joined forces and created this bowl of deliciousness. My husband has declared that overnight oats are his favorite breakfast meal of all time. I think I just jacked it up to a new level. The beauty of this recipe is the versatility: use whatever you have on hand to mix-in or as toppings. The “morning glory” part of the oats is the inspiration pulled from the famed Morning Glory muffin. Warm cinnamon and spicy ginger evoke that muffin-y feeling. Oatmeal on its own doesn’t fill me up for long – but these overnight oats have a great balance of protein and fiber and kept me full until mid-afternoon. I’m dreaming of other muffins that can be turned into overnight oats. Blueberry crumb? Lemon poppyseed? Yum. More oats, please. And that pepita brittle you see sprinkled on top? Brought back from our last trip to Mexico. PERFECT here, but also glorious on a salad.

These morning glory muffin-inspired overnight oats are a great way to get some super foods in at the start of your day!
Ingredients
  • ½ cup dry oats
  • 1 tablespoon hemp seeds
  • ½ cup greek yogurt
  • ½ cup almond milk
  • ½ teaspoon vanilla extract
  • 1 cup carrots, grated
  • ¼ cup raisins
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 generous pinch of salt
  • Suggested toppings:
  • Toasted coconut flakes
  • Walnuts or pecans
  • Honey or maple syrup
  • Chia seeds
  • Fresh fruit
Instructions
  1. Combine first x ingredients in a bowl, stir to combine.
  2. Cover with plastic wrap and place in fridge overnight.
  3. When ready to eat, top with any of the suggested toppings listed above.
  4. Enjoy!
